Biblia Chora winery takes its name from the ancient moniker used for the wine region set on the foothills of Mount Pangeon in north-eastern Greece. It was here in 1998 that renowned winemakers Vangelis Gerovassiliou and Vassilis Tsaktsarlis found the perfect site for their new winery. Today the estate has some 65 hectares planted with both native Greek and international varieties which are all farmed organically. This stunning rosé is crafted from Syrah grapes sourced from the coolest vineyards on the Biblia Chora estate where conditions are superb for creating fresh and aromatic rosé wines. The grapes are carefully selected and harvested at optimum ripeness and then fermented in temperature-controlled neutral tanks to emphasize the natural elegance and quality of the fruit. Expect a stunning pale pink hue in the glass and enchanting hints of pomegranate, rose petals, zesty lemon and freshly-cut herbs. On the palate there is a refreshing acidity along with rich red berry notes like raspberry, cranberry and strawberry which linger a while on the tongue. Why not try pairing this exquisite wine with fresh seafood, grilled fish, sushi, or leafy summer salads with goat’s cheese.
